Parmesan Shrimp and Grits with a Lemon Gravy

These cheesy grits are served under a lemony gravy-like sauce for the perfect mix of tangy and savory, It’s southern comfort food like you’ve never tasted before.


4 cups of Water
1 Tbs. Salt
1 ½ Cup of Quick Cook Grits
½ Cup of Fresh Grated Parmesan Cheese
1 Tsp Paprika
½ Cup of Chives
1 Tbs Flour
1 Tbs Olive Oil
1 ½ Chicken Broth
1 – 2 Cups of Spinach (as desired)
2 Minced Cloves of Garlic
Half of a fresh lemon
10 Peeled and Deveined Raw Shrimp


Bring water and salt to a rolling boil in a medium sauce pan. Turn heat down to medium-high and gradually whisk in grits. Cook for 7 minutes, occasionally stirring. When thick, remove from heat, and stir in parmesan cheese and paprika.
While grits are cooking, add oil to a frying pan on medium high heat. Whisk in flour. Add shrimp and cook for 2 – 3 minutes on each side, until pink throughout. Add more oil and flour if needed throughout the cooking process, try to maintain a gravy-like consistency. Add Chicken broth, spinach, chives and garlic. Squeeze the fresh lemon half into the frying pan, till there is no more juice left. Cook until spinach is wilted.
Serve the sauce, shrimp and spinach over spoonfuls of grits and enjoy!
