Crawfish Cocktail


• 1 lb. of chilled, cooked crayfish
• 1 cup of mayonnaise
• 2 tablespoons of lemon juice
• 2 tablespoons lemon zest
• 3 tablespoons of fresh cream


1. Mix mayonnaise, lemon juice, lemon zest and fresh cream in a bowl. Add a dash of salt, if desired.
2. Remove crawfish meat from shell by pinching the head and twisting. Dip meat in the creamy lemon cocktail sauce, enjoy!
Also works well with hot crayfish. To reheat, steam over boiling water until hot throughout, but not for too long, as overheating will cause meat to become tough.
