Grilled Jerk Turkey

Prep Time: 25 minutes (not including marinating time)


1/2 tsp paprika
1/2 tsp ground ginger
1/2 tsp dried thyme
1/4 tsp freshly ground black pepper
1/4 tsp ground allspice
1/8 tsp cayenne pepper
2 Tbsp low- sodium soy sauce
2 Tbsp olive oil
1 Tbsp dark honey
1 clove garlic minced
1 lb skinless boneless turkey breast



1) In a shallow baking dish, combine paprika, ginger, thyme, black pepper, allspice, cayenne (if using) and nutmeg. Add soy sauce, olive oil, 2 tablespoons of water, honey and garlic. Stir well to combine.

2) Place turkey breast on a cutting board. Carve into 8 thin slices. Lay turkey slices flat and cover with plastic wrap. With a kitchen mallet or heavy pan, pound slices gently to flatten.

3) Place meat in marinade and turn once to coat. Marinate, covered and refridgerated, for 3 to 4 hours or up to 6.

4) Prepare a fire in a charcoal grill or preheat a gas grill or oven broiler. Position grill rack or broiler pan 4 to 6 inches from heat source. Remove turkey from marinade and arrange on grill rack or broiler pan. Discard marinade.

5) Grill or broil turkey slices until they opaque throughout, about 1 minute on each side. Watch carefully to prevent burning. Serve immediately.
