Pasta Clams

Our pasta clams are tiny & delicate clams from Wellfleet, MA with a slight saltiness that goes perfect in dishes served over pasta. A low fat source of protein and rich in iron, clams are easy to cook and make a wonderfully delicious yet healthy addition to any pasta dish.
 
Fresh clams should be alive when purchased and have a mild ocean fresh smell. Shells should be tightly closed, or close up when tapped. Store them in a single layer, covered with a damp cloth in the fridge, and use them within two days. Before cooking, scrub them with a hard-bristled brush and let them soak in a large bowl or bucket of salted water for 30 to 60 minutes to expel any extra sand, then rinse again. When cooked, the shells will open slightly, discard any that do not open after cooking.
