Rarebit with Tomato Chutney

– 7 oz. Pilgrims Choice Red Leicester Cheese, shredded (about 1 3/4 cups)
– 1/3 cup Newcastle Brown Ale or dark beer of choice
– 1 tbsp. butter
– 1 tbsp. whole grain mustard
– 1 tsp. all-purpose flour
– Splash of Worcestershire sauce
– 12 baguette slices, 1/2-inch thick
– 2 cups mixed lettuce leaves
– 1/2 cup tomato chutney or salsa

In a heavy-bottomed saucepan, gently whisk cheese, beer and butter over low heat until cheese melts and mixture is creamy. Add mustard, flour and Worcestershire sauce. Bring to a boil, whisking constantly. Remove from heat and allow to cool, whisking occasionally.

Preheat the broiler. Arrange baguette slices on a baking sheet and broil about 3 inches from heat until toasted on one side. Spread untoasted sides with cheese mixture. Broil until cheese mixture is golden brown. Place 3 baguette slices on each of 4 salad plates and garnish each plate with 1/2 cup lettuce and 2 tbsp. chutney or salsa. Serve immediately.
Cook’s Tip: If short of time, simply grate Red Leicester cheese onto buttered toast and grill for a wholesome snack.
