Savory Truffles

– 8 oz. low-fat cream cheese
– 7 oz. Pilgrims Choice Smokey Cheddar Cheese, shredded (about 1 3/4 cups)
– 1 finely chopped scallion, white and green (about 2 tbsp.) very finely chopped
– Freshly ground black pepper
– 2 tbsp. paprika
– 5 tbsp. finely chopped fresh chives
– 3 tbsp. lightly toasted sesame seeds

In a large bowl, mash cream cheese with a rubber spatula or wooden spoon until soft. Add cheese and scallions, working them in until thoroughly mixed. Season with pepper.
Roll cheese mixture into 30 walnut-sized balls. Roll 10 balls in paprika, 10 in chives and 10 in sesame seeds. Chill until ready to serve.
Cook’s Tip: Roll the cheese balls in finely chopped pistachio nuts, cashews or almonds, or try finely chopped parsley or cilantro instead of chives. The mixture can also be spread on tiny crackers or mini bruschetta and garnished with fresh herb sprigs.
