

Turkey Zucchini Skillet
Ingredients
- 3-4 Medium Zucchini quartered & cubed
- 1 Sweet Vidalia Onion, Diced
- 4 Cloves Garlic, Diced
- 1 lb. Fresh Ground Turkey
- 28 oz. Can Caraluzzi’s Crushed or Diced Tomatoes
- 1 Tbsp Caraluzzi’s Extra Virgin Olive Oil
- Salt & ground black pepper to taste Crushed Red Pepper Flakes optional
- Shredded Parmesan or Romano to taste
- 16 oz. Pasta or Rice
Instructions
- Start pot of water & cook pasta or rice per instructions.
- In large skillet add olive oil over medium heat. When hot add onion and garlic. Sauté for about 2 minutes.
- In same skillet push onion garlic mix to the side and add the ground turkey in the middle. With a spatula break up the turkey as it cooks. Add salt and pepper and cook for about 4-5 minutes. When the turkey is browned combine it with the onion garlic blend and mix well.
- In same skillet add zucchini & tomatoes and then mix all together. Turn down the heat to a simmer and cover skillet to simmer for about 15-20 minutes.
- When done you can serve in individual serving bowls over the pasta or rice. Sprinkle on shredded cheese and optional crushed red pepper flakes for a little kick.

This is a simple 1 skillet recipe that makes a nice healthy comfort food meal option. Similar recipes call their options as a “refrigerator meal” meaning you can use anything in the fridge like substituting or adding broccoli or spinach instead of zucchini or using ground chicken or beef instead. You can put your own twist on this meal and it will surely become part of your regular repertoire.
