Irish Soda Bread

A St. Patrick's Day favorite, Irish Soda Bread is great for breakfast, dessert, or snacking in between!

Ingredients
  

  • 4 cups all-purpose flour
  • 2 Tbsp granulated sugar
  • 6 Tbsp butter
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 tsp vanilla extract
  • 1 cup raisins

Instructions
 

  • Preheat oven to 325 degrees. Grease and flour 2 loaf pans.
  • In a large bowl, mix flour and sugar. Cut in butter until mixture resembles small crumbs. Sift together baking powder, salt and baking soda over crumb mixture.
  • In a small bowl, whisk eggs and add buttermilk and vanilla. Pour over crumb mixture and mix with a fork. Add raisins. Bread should be dough-like consistency.
  • Spread into prepared pans. Bake 1 hour.
