Baked Haddock with Lemon Caper Sauce
Ingredients
- 4 Tablespoons Olive Oil. Use 2 Tbsp for pan and save 2 Tbsp for sauce.
- 2 Haddock fillets, 1/2 - 3/4 lb. each.
- 2 teaspoons capers in brine
- juice from 1/2 lemon
- fresh ground sea salt to taste
- fresh diced parsley for garnish
- fresh ground pepper to taste
Side Ingredients to serve:
- Asparagus or Baby Bok Choy and Rice
Instructions
- Preheat oven to 350 degrees F
- Grease an oven-proof dish or pan with 2 Tablespoons olive oil and place fish spaced evenly apart and add a dash of sea salt, pepper, and a small squeeze of lemon.
- Bake for 15 minutes (you may need a little longer for thicker fillets).
- Remove from oven and transfer fillets to serving plates. Add 2 Tablespoons of olive oil, lemon juice, capers, and salt and pepper to the hot pan and mix well. Then drizzle over fish and can drizzle over the rice if you choose to serve it.
- Garnish with parsley & serve with a vegetable and rice.
Notes
Can substitute most white fish fillets as other options like cod, tilapia, and halibut just to name a few.
