

Beef Enchiladas
Using Caraluzzi's Chef Prepared items make this recipe quick and easy, and oh so delicious!
Ingredients
- 1 lb. Caraluzzi’s Birria Beef fully cooked
- 8 oz. Caraluzzi’s Black Bean Dip
- 10 Soft Flour Tacos
- 2 Fresh Green Onions green part only, thin sliced
- 32 oz. cans (2 16oz. cans) OEP Enchilada Sauce, split use
- 1 oz. sliced black olives
- 8 oz. creamy melt Mexican Cheese split use
- Caraluzzi’s Cilantro Rice or Rice & Beans optional
- Caraluzzi’s Guacamole and some sour cream optional
Instructions
- Preheat oven to 350 degrees.
- Lay out all 10 tortillas and place an equal amount of Caraluzzi’s Black Bean dip, Birria Beef and just ½ of the shredded cheese in the center of each tortilla.
- Open 1 can (16 oz.) of enchilada sauce and pour evenly on the bottom of a 9x12 baking dish.
- Tightly roll each tortilla and place into the baking dish on top of the sauce with the seam of the tortilla facing down.
- Then pour the other can of enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese and all of the olives.
- Bake uncovered in a 350 degree oven for 25 minutes until sauce is bubbly and cheese is melted.
- Remove pan from the oven and sprinkle the sliced green onions on top.
- Serve enchiladas with optional warmed rice and top with guacamole and sour cream.
Notes
Can serve with Caraluzzi’s Cilantro Rice or Rice & Beans. Add Caraluzzi’s Guacamole and some sour cream. Can substitute Caraluzzi’s Pork Carnitas, Pork al Pastor or Beef Barbacoa for the Birria Beef.
