Grilled Salmon a la Boursin
Ingredients
- 4 pieces salmon fillet approx. 1/2 lb pieces
- 2 tbsp lemon juice
- salt and pepper to taste
- 1 pkg Boursin Cheese
Cucumber Relish
- 1 large cucumber, diced
- 1 cup radishes, diced
- 2 tbsp dill, finely chopped
- 2 tbsp olive oil
- 2 tbsp lemon juice
- salt and pepper to taste
Instructions
- Preheat grill or broiler on high
- Sprinkle salmon fillets with lemon juice, salt and pepper.
- Grill or broil about 8 minutes.
- Spoon about 3 tablespoons Boursin cheese on top of each fillet and continue cooking for another 2 minutes until salmon is cooked through and Boursin has softened.
Cucumber Relish
- Combine all the relish ingredients into a medium bowl.
- Toss until evenly mixed.
- Portion out for each salmon fillet and serve either on top of or underneath the grilled salmon.
