Irish Soda Bread (Serving Size: 12)

Prep Time: 20 minutes


4 c all-purpose flour
2 Tbsp granulated sugar
6 Tbsp butter
3 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
2 eggs
1 c buttermilk
1/2 tsp vanilla extract
1 c raisins


1) Preheat oven to 325 degrees. Grease and flour 2 loaf pans.

2) In a large bowl, mix flour and sugar. Cut in butter until mixture resembles small crumbs. Sift together baking powder, salt and baking soda over crumb mixture.

3) In a small bowl, whisk eggs and add buttermilk and vanilla. Pour over crumb mixture and mix with a fork. Add raisins. Bread should be dough-like consistency.

4) Spread into prepared pans. Bake 1 hour.
