Irish Soda Bread
A St. Patrick's Day favorite, Irish Soda Bread is great for breakfast, dessert, or snacking in between!
Ingredients
- 4 cups all-purpose flour
- 2 Tbsp granulated sugar
- 6 Tbsp butter
- 3 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 2 eggs
- 1 cup buttermilk
- 1/2 tsp vanilla extract
- 1 cup raisins
Instructions
- Preheat oven to 325 degrees. Grease and flour 2 loaf pans.
- In a large bowl, mix flour and sugar. Cut in butter until mixture resembles small crumbs. Sift together baking powder, salt and baking soda over crumb mixture.
- In a small bowl, whisk eggs and add buttermilk and vanilla. Pour over crumb mixture and mix with a fork. Add raisins. Bread should be dough-like consistency.
- Spread into prepared pans. Bake 1 hour.
