Lemon Zucchini Boursin Chicken & Orzo
Ingredients
- 1 shallot minced
- 2 small to medium zucchini shredded
- ½ Lemon juiced
- 3 Tbsp Butter split
- 2 Tbsp Extra Virgin Olive Oil split
- 16 oz Orzo pasta
- 5 cups chicken broth 48 oz
- 1 Boursin Garlic & Herb Cheese 5.2oz
- 1 lb cooked pulled rotisserie chicken meat
- Salt & Pepper to taste
Instructions
- In a medium to large skillet over medium heat, add 1 Tbsp of olive oil and 1 Tbsp of butter. When butter melts add shredded zucchini. Add salt & pepper and sauté for approximately 3 minutes stirring occasionally. Then remove zucchini from pan and set aside.
- In same pan, add 1 Tbsp of olive oil, 1 tbsp of butter and the minced shallot. Sauté for about 2 minutes until shallots turn opaque but not brown.
- Add 1 Tbsp of butter and the orzo to the pan stirring into the shallots for about 2 minutes allowing the orzo to toast up a bit for flavor.
- Add in the chicken broth and gently stir to separate shallots and orzo from bottom of the pan. Turn up the heat to bring broth mixture to a simmer. When it gets to a simmer, cover with lid, turn down heat and let simmer for 10 minutes. Stirring occasionally and ultimately having the broth absorbed into the orzo.
- Then add the rotisserie chicken, zucchini, Boursin cheese and squeeze of lemon juice. Continue to stir until all is fully mixed and the orzo is creamy, about 2 minutes. Can add a little more broth if the texture is too creamy for your preference.

• This is a simple one pan dish that’s sure to be a hit. This recipe could serve 6 technically, but never makes it that many in our household.
• You can substitute cooked shrimp or cooked bay scallops instead of chicken as an alternate.
• You can use chicken stock instead of broth but if so, you may need to add more salt to flavor the dish.
