Ingredients

  • 1 lb Beef Flat Iron Steak sliced ¼”
  • 12 oz. pkg Fresh Green Beans diagonally sliced in half
  • 4 cloves garlic minced (or 4 tsp of the squeeze garlic)
  • 1 Tbsp fresh ginger minced
  • 4 Fresh Scallions thin sliced
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Mirin Sweet Rice wine
  • 1 Tbsp heaping brown sugar
  • 4 Tbsp Peanut Oil
  • 1 tsp Sambal Oelek chili paste optional
  • 2 cups uncooked rice or 1 pkg Ben’s Ready Rice 17 oz. pkg
  • Salt & Pepper to taste
  • Sesame Seeds optional

Instructions

  • Slice Steak into ¼” slices against the grain.  You can place the steak in the freezer for 30 mins before hand to help make slicing it easier.  Set aside.
  • Slice the green beans in half on a diagonal and set aside.
  • In a small bowl combine garlic and ginger. Set aside.
  • Cook rice according to instructions. If you use the ready rice you can just wait until the beef is done and microwave per instructions.
  • In another small bowl combine soy sauce, mirin, brown sugar & optional sambal. Set aside.
  • In a large skillet or wok, add 2 Tbsp of peanut oil over medium high heat. When heated, add green beans and stir fry for 8 minutes until beans are blistered and brown in some spots. Add salt and pepper and then transfer the beans to paper towels and set aside.
  • In same pan add 1 Tbsp of peanut oil and when hot add the garlic & ginger mixture. Sautee and stir for about ½ a minute and then add ½ of the steak (so as not to overcrowd pan) and sauté the meat for about 3 minutes until beef is browned on both sides. Transfer beef to bowl with a slotted spoon and repeat process with the remaining beef.
  • When the last of the beef is done add back the other cooked beef, cooked beans, the soy mirin sugar mixture and sliced scallions to the pan. Cook for about 3 mins until sauce thickens and everything is heated.
  • Serve over rice can garnish with sesame seeds.

Notes

The sambal/chili paste is optional if you prefer to add some spice/heat to the meal
This one is also good for meal prepping and you can make bowls ahead for the week.
