

Whole Roasted Bronzini
Bronzini, also known as Mediterranean seabass, is a sweet-flavored, semi-firm white meat fish that can be easily prepared using olive oil and seasonings and is often grilled, roasted, poached, steamed, or braised whole.
Ingredients
- 1 whole bronzini cleaned & scaled
- 1 fennel bulb thinly sliced
- 1 shallot thinly sliced
- 2 sprigs tarragon
- 2 sprigs sage
- 1 lemon thinly sliced
- salt & pepper to taste try Caraluzzi’s 5-Pepper Blend and Caraluzzi’s Sea Salt
Instructions
- Preheat oven to 375˚F.
- Rinse and pat dry fish.
- Score bronzini on both sides (3 on each side) and fill cavity with fennel, shallot, tarragon, sage, lemon, salt, and pepper. Season outside of the fish with salt & pepper & roast for 18 to 22 minutes or until cooked through and flaky.
