Whole Roasted Bronzini
Bronzini, also known as Mediterranean seabass, is a sweet-flavored, semi-firm white meat fish that can be easily prepared using olive oil and seasonings and is often grilled, roasted, poached, steamed, or braised whole.
- 1 whole bronzini cleaned & scaled
- 1 fennel bulb thinly sliced
- 1 shallot thinly sliced
- 2 sprigs tarragon
- 2 sprigs sage
- 1 lemon thinly sliced
- salt & pepper to taste try Caraluzzi’s 5-Pepper Blend and Caraluzzi’s Sea Salt
Preheat oven to 375˚F.
Rinse and pat dry fish.
Score bronzini on both sides (3 on each side) and fill cavity with fennel, shallot, tarragon, sage, lemon, salt, and pepper. Season outside of the fish with salt & pepper & roast for 18 to 22 minutes or until cooked through and flaky.
