


Spicy Peruvian Chicken Rice Bowl
Ingredients
- 9 oz Fresh Express Leafy Green Romaine Lettuce
- 1 lb. Caraluzzi’s Peruvian Chicken Thighs (fully cooked), sliced (Caraluzzi's Chef Prepared)
- 1 lb. Caraluzzi’s Yellow Rice (fully cooked) (Caraluzzi's Chef Prepared)
- 8 oz Caraluzzi’s Black Bean Salsa
- 1 fresh avocado sliced
- 4 sprigs fresh scallions sliced
- 1 fresh lime sliced
- 6 oz approx. Queso cheese crumbled
- Peruvian Zesty Green Hot Sauce
Instructions
- Warm the chicken in a pan over medium heat or microwave to desired temperature.
- Warm the rice in microwave to desired temperature.
- In individual serving bowls lay down a bed of lettuce portioning out evenly.
- Then portion out the rice, black bean salsa and avocado into each bowl.
- Garnish top of each bowl with cheese, scallions & a slice of lime.
- Lastly drizzle over the top of each bowl with Spicy Peruvian Sauce. You can eliminate the sauce if you don’t like spicy food and substitute a dollop of sour cream instead.

Can make some up ahead of time and take for lunch during the week.
